Barley and Vegetable Soup
Preperation time: 20 minutes
Cooking time: 50 minutes
2 cups barley
1/4 cup oil
2 large onions diced
12 cups vegetable stock or water
6 cups diced mixed vegetables
1 cup chopped parsley
Heat oil and saute barley & onions
Add stock and simmer for 30 minutes
Add vegetables and cook another 20 minutes
Season and garnish with parsley
Other grains can be used in soups; millet, rice or cornmeal.
A handful of flakes- barley, oats rice, wheat, rye can be used to help thicken the soup.
