Brussels Sprouts Gratin
150ml/1/4 pint/2/3 cup whipping cream
150ml/1/4 pint/2/3 cup milk
25g/1 oz Parmesan cheese, grated
675g/1 1/2 lb Brussels sprouts, thinly sliced
15g/1/2 oz butter
1 garlic clove, finely chopped
salt and freshly ground pepper
Preheat the oven to 150°C/300°F/Gas 2
Butter a shallow ovenproof dish.
Blend together the cream, milk, Parmesan cheese and seasoning.
Place a layer of Brussels sprouts in the base of the prepared dish, sprinkle with a little garlic and pour over about a quarter of the cream mixture. Add another layer of sprouts and continue building layers in this way, ending with the remaining cream and milk.
Cover loosely with greaseproof paper and bake for 1-1 1/4 hours. Halfway through cooking, remove the paper and press the sprouts under the liquid in the dish. Return to the oven to brown.
