Carrot Cake

300g butter

2 Tbsp grated orange rind

1 cup brown sugar

4 eggs

2 cups grated carrot

2 cups backing flour

2 tsp cinnamon

2 tsp nutmeg

4 tsp backing powder

4 Tbsp milk

Cream butter, orange rind and sugar. Beat in eggs one at a time. Stir in carrot. Sift flour, cinnamon, nutmeg and baking powder. Stir in milk. Spoon mixture into a well-greased ring tin. Bake at 350°F (180°C) for 50 minutes or until cake springs back when lightly touched. Leave in tin for 10 minutes before turningout onto a cooling rack.
